Every since starting this Whole30 journey, I have been obsessed with all things coconut milk. I pretty much never cooked with it before…and I had no idea what I was missing. It makes everything so creamy and delicious. Just yum.
I usually stay away from all creamy sauces (alfredo, hollandaise etc), but coconut milk just sounds healthy to me so it’s fair game.
This recipe was made up of shrimp and zucchini noodles so the healthy factor was already sky high. Add some cocout milk to it and bam, its the perfect meal.
I gave Cooper a small bowl for dinner and he ended up throwing all of it on the ground. This happens 50% of the time with anything I give him. However, this time I picked it all up off the floor and added it to my bowl. That’s how good this meal was people. The 5 second rule (which has become more like the 20 second rule…or maybe even 5 minute rule in my house) was all over that.
