Spicy Asian Cauliflower Stir-Fry

People. I’m back!! I’ve been gone for a while, because you know, life. But don’t think I stopped cooking for a second. Because that would be stupid. And the biggest understatement of the year.

Since Mark is STILL doing Whole30 (it’ll be a year next month), I’ve had to alter my cooking methods. I still do all my meal prep on the weekends but now it’s a lot more #basic.

What we try to do is grill EVERYTHING. All the meats, and all the veggies. (I also secretly love this method because Mark is the griller, not me, hehe). I do prep and season it all though, and then package it all up nice and neat for him.

But if we don’t break out the grill, because it’s Florida and hello thunderstorms, I just cook it all inside.

So, for example, this weekend I cooked…are you ready for it?…

Meats:

  • Shrimp
  • Chicken Legs
  • Ground Beef & Ground Pork
  • Shepherds Pie
  • Chicken Breasts
  • Scrambled Eggs

Veggies:

  • Cauliflower Rice
  • Eggplant
  • Squash
  • Mashed Potatoes
  • Roasted Potatoes
  • Cauliflower
  • Big Salad

But you’re like “Sophia this post isn’t about any of those foods”. You’re right. So shut up Sophia.

Ok, but it is about cauliflower. Which was one of the things on that list. Ha. But the catch is, I had to make it 2 ways because Mark can’t eat this version. Because he’s dumb.

I cook cauliflower A LOT and I’m always looking for new ways to change it up. This is it!! Garlic, Soy Sauce, Green Onions and Sriracha. How can you go wrong with those things?

I blinked and it was finished. That’s how “Sophia” recipes have to go these days since I spend all my time pampering my husband with his specialty meals. He’s getting overly spoiled. Someone tell him that.
