Guys. I am getting so good at this “making up recipes” thing. I’m shocked with myself. It’s taken me 26 years but I just realized…I am (sort of) creative! Homeschool paid off. Shout out to mom.
Mark had a buddy coming over for dinner tonight so I wanted to make something heartier than just the grilled chicken salad I was going to go with. I didn’t shop with this in mind though, so I had to randomly figure something out.
We always have a box of spaghetti lying around (and that’s the perfect meal to feed hungry men). I found a jar of Roasted Garlic Marinara sauce, too. I couldn’t just combine those 2 ingredients though. What am I a 30 year old bachelor?
I had a box of fresh spinach in the fridge, and I rummaged through my freezer searching for some random mean. Lean ground pork. Bam.
I browned the ground pork in a skillet, and cooked the spaghetti. I combined the spaghetti and pork and added handfuls of spinach. I drizzled it with olive oil and sprinkled Old Bay on top.
I kinda just shoved 2 bowls of the finished product in front of the guys, and hoped for the best. Meanwhile, I was giving Cooper a few noodles in his highchair…which he rubbed all over his body. Great. Post bath too. What the heck was I thinking?
I also made some kale chips just to have some more greens in there. But in chip form so the men would like it. I just sprayed some avocado oil on it, salt and pepper, and roasted them for about 10 minutes at 450.
The guys LOVED the spaghetti. THEY ATE THE WHOLE POT. This meal took zero planning, zero extra trips to the store, and zero stress because I didn’t even know what was happening until I was done making it. Booyah.
