New York Strip Steaks and Roasted Rainbow Carrots

The other day Mark mentioned that I never cook red meat for dinner. Truth. I am not the biggest fan of red meat. I’m more of a lean protein kinda girl – chicken, and turkey are my jam.

But sometimes, in marriage, you gotta do things you don’t wanna do. And you gotta think about the other person first. I mean who comes up with this stuff?

I don’t know anything about meat. Like what are all these different cuts? What part of the cow do they come from? How do I cook them? So many unknowns!!

While I was at the commissary earlier this week I just grabbed a bunch of different cuts (probably while looking like a confused psyco lady) and told myself I’d figure out how to cook these bad boys later.

Tonight was night numero uno. I grabbed New York Strip Steaks outta the freezer and spent about 5 minutes googling different recipes to get ideas. I didn’t have all the ingredients to make a specific recipe, so I just made up my own.

New York Strip Steak

I melted half a stick of butter in a skillet. Then I rubbed the 2 steaks with salt, pepper, garlic powder, paprika, red pepper flakes and dried onion on both sides. We like steaks medium rare so they cooked up super quick – a few minutes per side.

The Roasted Carrots were super easy. My cousin got me hooked on this avocado oil spray. Similar to Pam, except its just pure avocado oil. No other nasty ingredients. And it tastes super yum. I laid the big carrots on a baking sheet and sprayed them all over with the avocado oil. I sprinkled salt, pepper, and a sesame seed mixture on top and roasted at 510 degrees for about 20-25 minutes.

I made some white rice too, which I didn’t have anything special to put on. But then I had this buttery steak sauce left over so I just poured that on top of the rice. Because everything tastes better with butter.
