I basically love every single Food Network show. But one of my favorites is the Pioneer Woman. I would like her to adopt me as her fifth kid.
Mark’s parents and youngest brother are here visiting for a few days, so I thought this would be a great meal because… 1. It only takes 16 minutes to make and 2. Mark is one of 4 boys. The amount of food they all consume is insane. I grew up with only one brother and two sisters. My dad is a small little guy, so we grew up eating like little chicks. Baby birds. The Beale’s grew up eating like like baby teradactales going threw a growth spurt. And now that they are all grown, they eat every meal as if they are heading into hibernation for the winter.
I used 2 boxes of 16 oz of rigatoni. So 32 ounces of pasta. 32 ounces. I thought I’d have enough leftovers for Mark to take to work for a week. Nope. Almost all was consumed. And I only had one measly bite to make sure it wasn’t poisoned. I’m trying to work on my Florida beach bod over here.

The sauce is a pureed roasted red pepper and onion sauce with heavy cream added in. Um, yum. Not good for building a bikini body, but whatever.
All I can say is I hope we don’t have 4 boys because I don’t think my wallet could sustain the amount of food I would have to buy. I also think, eventually, it would catch up to me and I’d end up being about 240 pounds.
