Guacamole Chicken and Sweet Potato Fries

Most of the time I feel like trying to figure out what to make for dinner is half the battle. Especially when I’m not in the mood to cook, shop…or even stand.

Mark made his amazing guac last night (seriously, so yum) and it was about to be dead as doornails today, so I decided to reuse it. I had some chicken breasts in the fridge so I decided to smash these two ingredients together.

I had a bag of sweet potatoes which were about to go see their maker as well, so I had to use those puppies up.

The Guac recipe…

  • 8 small avocados
  • 2 small tomatoes
  • 1.5 Jalapeños
  • The juice of 2 limes
  • A handful of chopped cilantro
  • About half of a red onion, diced
  • Salt, pepper, and red pepper flakes to taste.

I actually made this yesterday, but it’s his recipe so I’m giving him the credit. Which is bull shit because preparing it is the hard part. I’m so not bitter at all. Just kidding, I do a better job anyways hehe.

Mix this all together, but be gentle. We like to leave the avocado with more of a chunky consistency.

I grilled the chicken up in a skillet and sprinkled it with chili powder, garlic salt, and red pepper flakes and then put a big ole scoop of the guac on top.

For the sweet potatoes, I like to make them into baked fries. I slice them up (and leave the skins on cause Mark likes that), throw them on a baking sheet, drizzle with olive oil and sprinkle with some cinnamon and nutmeg. It sounds weird with the spicy guac but trust me it works. Plus, my kid eats these things up so even if my husband didn’t like them, too bad. (He liked them though…I mean he didn’t even touch a spatula the whole time, so he better have).
