It’s been 2 days and I’m STILL living off these leftovers; they are that good.
I made it when my mom was visiting because, like I’ve said before, trying to cook with a 7 month old is harder than it sounds. Not only that but when I do get a nap-time break, I want to do things like shower. Cooking – not so much.
This dish was actually really simple. Just grill some chicken up and season it with BBQ sauce. Then slice up so peaches and toss it together with a package of broccoli slaw and top with Feta and Bacon.

Consensus? The chicken ended up taking on the fruity flavor of the peach which was light and refreshing. The crunch of the broccoli slaw gave it the perfect texture. The creaminess of the feta was awesome and then bacon add the salty kick.
Literally like the most complete meal. For breakfast, lunch and dinner. I always eat stuff like this for breakfast. Mark thinks I’m crazy, but whatever it’s damn good. So why the heck wouldn’t I eat it for every single meal?!
