Orange Dill Salmon and Curry Rice Pilaf

When you have a 7th month old baby, your days of staying out till 11pm watching fireworks are over. Long over. One, he can’t stay up that late. Two, I can’t stay up that late. And three, I don’t think blowing his eardrums out would be a good idea.

My mom and granddad were visiting me, so instead of going out, we decided to have a relaxing night at home. I cooked because these days I jump at any chance I can to make a home cooked meal. Cause there is no way I’m going to cook a whole meal just for me. One little measly person.

I think Salmon is one of the easiest things to make. Usually I just broil it in the oven for about 3 mixtures per side. This recipe told me to grill it but my husband is gone so dude….I don’t grill. I decided to wing it and bake it at 450 degree instead. I layered asparagus on a baking sheet and toped it with the salmon. I cut up some orange wedges and scattered those around as well.

This rice. Omg. So easy. It makes me want to cook rice like this all the time. BECAUSE YOU DON’T EVEN NEED TO COOK IT. Well of course it was cooked but not in the way you normally cook rice. You “toast” it in some butter first and then add some stock after a few minutes. The whole dish only cooks for 12 minutes which I find freakin awesome.

Of course I still asked my mom about 27 times if I was cooking everything the right way. It doesn’t matter that I’m 25, married and have a kid. And even if she’s not physically with me, I will still call her 27 times. Because she’s my mom. Duh.
