BBQ Shrimp Toasts and Veggies

Yesterday I was as sick as a dog. (What does that saying even mean?) But seriously. Like on the bathroom floor for 24 hours dying. I grabbed a pillow and a blanket and made camp on the living room floor next to Coop’s bouncer. Being sick and having a baby has got to be a cosmic joke. He was the best baby though and needed basically nothing from me all day. I love him.

I ate 5 saltines crackers all day.

Today I was finally alive again, so I decided to make BBQ shrimp toasts. I got this recipe from Cooking Light May 2016 edition. These things were so quick and tasty. It reminded me of eating at a Tapas Bar. Gosh I love those places.

I also made a side of Sautéed Mushrooms and Caramelized Brussel Sprouts.  Anytime I see  those 2 items on a restaurant menu I have to order them. It’s pretty much a rule I made for myself. Both recipes are from the May 2016 Cooking Light magazine as well.

Mark ended up getting sick today too (Oops), so when he came home he only wanted toast for dinner. Oh well, more for me! (I did make him toast though, even though it’s sooo hard to make, such a chore.)
