Let’s talk about Jalapeño Poppers for a sec. Poppers are pretty dang delish. But all in all, I’m not a a huge fan, because I’m not a huge fan of fried food. It’s greasy and who the heck needs those extra calories? Not me. I’m trying to maintain a Florida beach body over here.
However, this recipe was all about broiling the Jalapeño Poppers. No breading, no oil, no cellulite. Okay they were stuffed with goat cheese and cream cheese but whatever.

If I was gonna make Jalapeño Poppers, I had to made quesadillas. These were much easier than I anticipated and real yummy. Easy, flavorful, and minimal ingredients.

Serve the whole shebang with a side of marinara sauce and it’s like a make shift pizza dinner. But not really cause this is Mexican and pizza is Italian and I need sleep.
