Homemade Granola Bars. A Great Whole30 Snack.

Mark has been doing SO GOOD on this Whole30 diet, that I figured I better make a “snacky” food soon before he gets too overwhelmed and grabs a handful of goldfish from the pantry.

I found these easy granola bars online. Only 4 ingredients. Dates, Walnuts, Coconut, and Dried Cranberries.

I toasted the walnuts, and then processed all the ingredients in the food processor. I added a few tablespoons of water to combine and stick the mixture together.

I mashed the mixture into a baking dish and refrigerated it for a few hours, and then sliced it into “bars”. Or more like random shapes.

We had 2 friends over when the bars where completed, so they wanted to sample them too. They LOVED them. One of them even asked me for the recipe. And neither one is doing Whole30. So you know these things are legit.

Mark may possibly eat the whole batch in one day, but I don’t even care. THIS IS THE LONGEST HE’S GONE JUST EATING SQUIRREL FOOD.
