Vegetable Casserole with Tofu Topping – Sounds Gross, But it’ll Change Your Life

The other weekend Mark and I went to a party/get together/dinner at a house here in Florida. The TPC Sawgrass PGA Golf Tour was going on, and this house we went to was on one of the courses used. Easily a million dollar home. It reminded me of houses in Pebble Beach, California. Which is where another PGA Golf Course is held. If you have absolutley no idea what I’m talking about, all you need to know is that it’s where rich people gather. Google it.

There were a few dishes there, (and a ton of beer and wine obviously) but the best thing was this Tofu Veggie dish. One lady had brought it over because she eats vegan, dairy free, organic, super healthy – which I am all about. Although, by observing her, she probably drinks more calories in wine than she chooses to consume in food.

Moving on.

This dish is just a medley of sauteed veggies mixed with soy sauce, and the topping is tofu and breadcrumbs.

Mark saw the tofu, looked at me and was like “What is that? Is that tofu??”. I was trying to cook fast enough so he wouldn’t see. But he saw. I knew he wouldn’t wanna even look at it, let alone eat it.

I told him “Sorry, but you are trying this dish. Or you can starve.” I baked it, he tried it and liked it! He even took leftovers for lunch. #winning.

I added mushrooms because the rich lady said that’s what she did. And I listen to rich people, because well they are rich.

Honestly, I would have probably added them anyways because I’m kinda obsessed with those little pieces of fungus.

Mark ended up adding sunflower seeds to his serving and it gave it the perfect crunch.  Maybe he needs to start a blog. Although I’m just gonna keep encouraging him to make more money so I can live on a golf course one day and hire a maid. And a chef. And a nanny. And then just nap all day.
