So here’s the thing…we eat a lot of chicken around here. It’s cheap, healthy, easy to cook and delicious. And in all honesty, I’m scared to cook fish and red meat half the time. It seems so much more difficult to cook than it really is. Yes, food imitates me sometimes. Yes, I am being a baby.
I used to always cook chicken the same way – grilled chicken and a side of veggies. Blah, blah, blah. So now I am expanding my horizons and trying to cook it multiple ways. Mind boggling, I know.
Enter tonight. Fajita Stuffed Chicken. So good.

It’s basically just grilled chicken but then you stuff it with a mixture of sautéed onions and bell peppers, and some shredded cheddar cheese and cream cheese. Sounds awesome right? It’s one of my new favorite chicken recipes. And it totally appeals to both guys and girls.
Don’t you just wanna attack that with a fork and knife right now? Because I did. For dinner last night…and then for breakfast and lunch today . #chickenproblems.
