I’m pretty sure we have all been there. You’re bored, you find yourself scrolling down your Facebook newsfeed, you are bombarded with those buzzed (or whatever) food videos, and you think to yourself “Gahhhh I HAVE to make that”.
But then you never do.
Enter Sophia. My goal the next few weeks is to make those recipes. I mean are they actually that easy?
Well I can tell you this one is.
I saw this recipe first on my cousins Facebook page, then my mother-in-law messaged me the link, and then I got scared for a quick minute about how prevalent social media is in our lives. I regained myself though and went to the grocery store.

All you do is layer chicken tenders in a baking dish, top it with pesto, sliced tomatoes and fresh mozzarella. Add some salt, pepper, Italian seasoning, and parmesan and you’re set to go.
I was chatting to my mom on my phone during the whole recipe. Thats how little attention it required.
We ate the whole entire dish, and now I am going to make a second batch to freeze for lunches later in the week.
Cooking twice in one day is not something I like to do. But I’m doing it because it is that simple. And delish. And mainly because I still have a huge amount of pesto in my fridge.
