Homemade Onion Rings

The most important thing we did today – finish our 40 hour Monopoly game from last night. Man, those things last for days. We were out and about the rest of the day, went to  lunch, and still have plenty of leftovers in the fridge so guess what? I’m not cooking. Bam.

But these Onion Rings though.

I made these a while back and boy oh boy are they tasty. I was watching the Food Network one afternoon, saw them, and was like I NEED TO MAKE THOSE. It was probably the best decision I made that week.

The recipe is from Ina Garten on the Food Network site. http://www.foodnetwork.com/recipes/ina-garten/cornmeal-fried-onion-rings-recipe2.html

I used to think frying any kind of food was a difficult task. But it really isn’t. Just heat some oil up on the stove, toss in the rings for about a minute or two, and they are done.

After you fry them you have to eat the whole batch, because fried food doesn’t last though the next day. Nobody likes soggy onion rings. So now you have a legit excuse to inhale a batch of onion rings.

Oh and Coop is 5 months old today! Time flies. And the older he gets the more fun it is. At least I think so.

Coop 5 months

See what I mean? He’s like a 40 year old man already!
