Sometimes I make 2 dinners – one for me and one for Mark. Actually, that never happens. Because why would I want to cook two different meals every night? That sounds teribl.
Tonight, I was making Cauliflower Alfredo – aka pasta – but I wasn’t feeling that. I still made it for Mark though, because I’m a nice wife.
I got this Cauliflower Alfredo recipe from the Cooking Light April 2016 magazine. http://www.myrecipes.com/recipe/cauliflower-alfredo. It was very basic. I cooked the pasta and blanched the broccoli and half of the cauliflower along with the pasta in the pot. I made the Alfredo sauce from some softened cauliflower, milk, butter…all the necessary things you need to make Alfredo from.
The chicken salad is something I just threw together. It involved spinach, red onion, tomato, parmesan, olives, avocado and grilled chicken. Yum.
