Spicy Chicken Pasta and a Beach Day

Who doesn’t love a good beach day? Especially when your mother-in-law tags along as an extra set of eyes to watch your baby. That way you and your husband can walk to the local beach bar and grab a drink. Or two;)

The babe loved the sand on his toes and airing his little bum out. Don’t worry I won’t post any compromising pictures of him. I don’t want him to sue me for indecent exposure in 18 years. Beach Day

Mark and I had plans to go out to dinner with our neighbors tonight, but I couldn’t leave Mark’s mom high and dry with no dinner since she was kind enough to babysit. Plus, it was 4:00 in the afternoon, and let’s face it my other child (my husband) needed a pre-dinner to his real dinner.

Moment of truth? I forgot I had to cook anything in the first place. Since Mark and I were going out to dinner, my mind was far from cooking dinner. Also, I was in a time crunch. I had to feed, bathe, and put the baby down. Not to mention, I had to try and look half way decent for a night out. So, I pulled out one of my quick go-to recipes.

I always have a box of spaghetti in my pantry. And of course, a bunch of spices. Luckily, I had some defrosted chicken breasts in my fridge too. So spicy chicken pasta is what they were getting.

This recipe is SO SIMPLE. All I do is toss the chicken in a skillet and sprinkle it with salt, pepper, red pepper flakes, chili powder, cayenne pepper and garlic powder. I go heavy on the spicy ingredients. While that cooks, I cook the spaghetti. Once both items are done, I drain the spaghetti, throw it back in the pot, and add some olive oil to moisten the spaghetti up. I take the chicken and cut it into bite size pieces and add it to the pot of spaghetti. I taste it and add more spices if necessary.

It takes maybe 15 minutes and it’s mother-in-law approved.
