I always forget that I can do amazing things with watermelon when I buy it. Usually I’m just so exctited to cut it open and chop it up, that I end up consuming half the entire thing before I realize what happened.
However, am I the only one who feels like they are playing Russian Roulette when they buy a watermelon? How am I suppose to know what the inside looks like?! Half the time I’m scared to spend my money on it, in fear that a natural disaster will be starting me back once I slice it open.
When my Dutch friend Floor was here she made a Watermelon, Feta and Spring Onion Salad. It was so refreshing and hydrating; I might just start consuming this instead of drinking water.
I decided to emulate her recipe this afternoon.
I chopped up a baby watermelon in bite sized pieces, took a small container of feta cheese and crumbled that on top, chopped up some spring onions, drizzled some olive oil over, and seasoned the whole thing with salt and pepper.
This would be the perfect dish to serve on a hot summer day while you are sitting outside by the pool. It will rehydrate you and you won’t have to worry about your belly bloating in a bikini. Although, I still have that problem since I’m pregnant and I’m in a constant state of looking like I gorged myself on burritos.
