It’s Tuesday. You gotta have Tacos and Margaritas on Tuesday’s. It’s like how on Wednesday’s you have to wear pink.
This recipe wasn’t technically a taco recipe. It’s really called Mu Shu Pork Wraps. But I decided to rename it. Mostly just so I could make margaritas.
I got this recipe from the Cooking Light April 2016 edition. http://www.myrecipes.com/recipe/mu-shu-pork-wraps-1. I started with sautéing up a bunch of vegetables (mushrooms, carrots, cabbage, and green onion). I removed that from the pan and added the pork into the skillet and browned that up. I added the Hoisin Sauce, and the vegetable mixture back in with the pork and heated it up. I grabbed some whole wheat tortillas and scooped the pork mixture into them and dabbed some Choula on top.

Now. The margaritas. I just kinda made this recipe up as I went along. I grabbed a bag of frozen berries out of my freezer and tossed it in the blender. I added 8 ounces of tequila, 8 ounces of triple sec and the juice of 2 limes. The last ingredient I used was a 12 ounce beer of Dos Equis. I blended that all up. It was still more triple sec tasting than I wanted so I added more tequila (because that never hurts).
Garnish each glass with a lime – and a salted rim – and you’re done. But don’t drink the whole pitcher because then you are really done.
