Mashed Potatoes. What is it with guys and mashed potatoes? I feel like I could serve cardboard with a side of mashed potatoes and my husband would be satisfied.
I started my morning with taking Mark Cooper to the commissary (military grocery store). Usually, I am able to do this solo while Mark watches the babe, but today the little lad joined me. Taking him with me is always easier than I anticiapte it’ll be, but it does require a little extra thought (How will I plan it around nap time? Has he eaten? Will he die of germs when EVERY old person wants to touch him?) But then boom. I just throw him in my wrap and carry him in with me and he is as happy as a clam.
Back to the mashed potatoes. This recipe was so simple my 4 month old probably could have made it. I got it from my Cooking Light magazine in the March 2016 edition. Here is the link to the recipe http://www.myrecipes.com/recipe/spinach-garlic-mashed-potatoes. It took a MAX of 15 minutes to make.
I MICROWAVED the potatoes (way simpler that boiling) to soften them. This was perfect because while they were microwaving I was able to change a diaper, mandatory. Then I threw some buttermilk and herbs on them. Meanwhile, I heated up some oil in a skillet, added garlic and then spinach to wilt down, and combined it with the potatoes. Done. So simple.
The best part of this meal were the turkey meatballs though. My husband, our baby and I. Okay well I just assume our baby loves spicy food since he is apart of this family now.
I combined the ground turkey with sesame oil and mixed it. I formed this mixture into little balls and browned them in the skillet. (Since I was making mashed potatoes, I omitted the polenta). Once browned, I removed the meatballs and added the sauce into the skillet. I heated the sauce, tossed the meatballs back in, and let it simmer for 5 more minutes. Then voila!
