Puff Pastry Salmon. Get In My Belly.

I was suffering from a severe case of mom boredom today. Being a new mom, you fluctuate between moments of utter chaos where you just want to hid under the covers, and moments of sitting on the couch, staring into space, waiting for your small child to pop up from a nap at a moments notice.

Today, it was the latter. Sure I could have deep cleaned my house, but I didn’t feel like it. Okay? Okay.

I was basically just counting down the hours until I could start cooking dinner. Not only because I was really stoked about this recipe… But I really needed a something to do.

I got this recipe from the Food Network. http://www.foodnetwork.com/recipes/sunny-anderson/easy-salmon-pie-recipe.html. I watch the Food Network. A lot. Like today, in my hours of boredom, this channel was on for an amount of time that I probably shouldn’t disclose.

This salmon recipe looks mega professional, but is so simple to create. Which is awesome. The recipe serves 4 but I chopped it in half. I took 2 salmon filets and rubbed some lemon juice on them. I heated up 2 skillets with some olive oil and added garlic and onion to both. Once that cooked down, I added mushrooms and thyme to one skillet, and spinach, lemon juice and lemon zest to the other. I removed the spinach from the stove (after it wilted down). When the mushrooms were tender, I removed them from the heat and added the sour cream. I took my puff pasty sheet, sliced it in thirds (I discarded the third piece), and layed the mushrooms, salmon and spinach on top.

I sealed the puff pastry, and let it cook in the oven for 25 minutes.

The result? Beautiful. It’s okay, you can cry.
